Grilling Pizza With @Pillsbury Makes Dinner Fun

When you are looking for new ideas for dinner with your family Pillsbury has just unveiled a great new way to make a kid favorite, pizza. Whenever we have made pizza as a family in the past it always was the regular way, using Pillsbury crust and baking it in the oven. However, as it is getting warmer, I spend a lot more time using the grill and I love finding new ways to be able to make fun items on the grill as well.

That being said, I was excited when I read the following watched the below video that explained the steps to take to grill a pizza.

In watching this, I decided to try this out for myself. I found that the instructions were clear and it really did only take about 20 minutes in all. The biggest thing that you need to be wary of was to watch and make sure that you did not burn the crust by having the grill too hot (I did this on my first try). Once I learned my lesson I found that as long as you watch this, you are easily able to make a crust that is nicely toasted and grilled exactly the way you want it to be.

 

Once you do grill your pizza, you then top it with the toppings that you want. We went a bit traditional with half being cheese (for the kids) and half have sausage, pepperoni and onion. Be aware the the more toppings that you put on the longer that it may take to cook the entire pizza!

Overall, grilling pizza was fun and something that the kids could really get into making themselves, which is always fun, as I tend to find that the food they help make, they eat! I also liked knowing when was going into my pizza and having control to the ingredients itself.

If you have never grilled pizza before, I highly recommend it!

Ideas for Making #Summer 2014 the Best One Yet

Summer is the best time of the year (IMHO). It’s the time when you and your kids can get outside, enjoy the weather, and do some fun activities (unlike during the winter when you’re pretty much snowed in). It’s also a time when you can start in on new home and yard projects to make some improvements and have some good family fun.

Not sure where to start? Well, here are some ideas to get those creative juices flowing:

18th Engineers Build Deck

Illuminated & Comfortable

The back yard deck will probably become the focal point for your summer nights. It gives you the ideal location to lounge and spend time with family and friends.

There are many guides to building a deck that are easy to follow and won’t cost an arm and a leg. They are well worth their investment since it’ll increase your property value and give you this focal point of activity as mentioned.

But let’s jump forward and list some ways to add some special touches to this area:

  • Consider going out of the ordinary and painting the deck with colors. There are many brands of paint that can handle the weather conditions. This splash of color (even if it’s just the railing) can be a nice addition and even more so if you use glow in the dark paint to give it a neat illuminated look after a bright, sunny day.
  • Consider the lighting and ambiance of your deck and try adding a little flair to it by picking out patio lights online with your family. Have a vote on which ones would go perfectly with the deck. There is a lot to choose from. You could even theme the deck to have a Tiki feel or give it a bit of a mystical look with flameless candles and such.
  • Consider doing a few DIY projects for the deck to add to its fun. You could install small compartments on the side to house yard games. Add a dart board on one end. Build a picnic table for a corner. Make your own hammock. All these projects would be great for spending time with your kids, teaching them a few skills, and having something neat to show at the end of the day.

These little additions can make for a truly enjoyable night. You all had fun setting things up during the day and can now relax. Not a bad idea for the summer (and spending time with the kids), eh?

My First Tree Fort

Forts, Fires, and Smores

I think it’s safe to assume that each one of us wanted a tree fort when we were younger. Building a tree fort isn’t all too difficult actually, as long as you can follow some plans, stay patient during the process, and remember to measure twice, cut once.

This also makes for a great activity to work on a big project with your children. You can do the heavy lifting and the dangerous stuff but then hand it over to them when it comes to decorating the fort, painting, and adding onto the fun.

Once that’s been built you can have nights where you’re all up there telling ghost stories or down in the yard cooking smores over a small fire. It’s really fun!

Fish Fries & BBQ’s

Some chicken, pork and corn in the barbeque

Food brings the family and friends together but it can also be a great opportunity to spend time with your children. Make a day out of gathering up the supplies for the fish fry or BBQ.

You could:

  • Go to the beach or lake and spend the day fishing, then bring it back to cook
  • Go to ethnic or farmer’s markets to find new ingredients and take a vote
  • Go as far as raising your own animals (if you have the property) for food
  • Invest in a nice grill or deep fryer and your next food party will create quite a buzz.

So many times for fathers day I am asked what I want. While some of my favorite gifts in the past have been the homemade kind from my kids, I have to say that food also warms my heart and fills gullet. At the same time, I am also a sucker for a great steak. I was so excited to be able to go out for the first time to try a local Longhorn Steakhouse with my family as an early father’s day present.

In entering the restaurant, I was first drawn to the decor. With a southwest feel, you get drawn into the feel of the theme of the food that you will be found here. Whether it was the artwork, the antler adorned light fixtures, or cowboy motifs, all are placed to transport you into a feeling the of the southwest. Even the music, Country of course, was well laid out, and one thing that was great was that while the music was playing it was not loud or over-played, but instead was just right.

All of my family were impressed with the breadth of the menu itself. You will not only find steaks (7 types of steak to choose from) at this restaurant, but a wide array of food that any patron will be able to connect with. If you are looking for a huge variety of steaks though, as I was in this visit, this restaurant will deliver. Even better though was the fact that the steaks that they offer range from prices starting at $11.99 on up so depending on the cut of beef you want and how much you can eat, you can definitely find a bit of everything. Most of my family, except the kids, all got steaks. The kids were happy as well with their choices on the menu. As a parent the prices for these children’s menu options were very reasonable and they get a ton of food, as did the adults.  The adult’s entrees also came with a ton of food, including salad and a side dish.

This was a Kids Meal!

When we received our food the only thing we all could say was WOW! The steaks that the adults received with mouth-watering and very well flavored. The food was made to our specification and the flavor was out of this world. I was the only one at the table to get the fully loaded sweet potato, and for any of you that love this amazing spud, I highly recommend, but know that it is definitely sweet!

As you can tell we were very excited about the food and the atmosphere in this restaurant. On top pf all of this was the service though. From the greeting at the door, which was held ope for us, we felt a part of the experience. The waitress we worked with was very attentive, and the manager that stopped at our table truly wanted to hear about our experience (and she did not know I was reviewing the restaurant).

With all of this said, I have to give five stars to Longhorn Steakhouse, for all of the reasons that I mentioned above and so much more. My Experience With The Products

I had the opportunity to try out all of these products at a recent party that we held (thanks to Frito-Lay). We had not seen our friends in a while so it was great to be able to sit back and relax as the warm weather is finally upon us here in Michigan! We were excited also to try some of these new products, as we had not in the past, but we are fans of Frito-Lay products and Chester Cheetah is definitely a favorite among my girls. I have to say that I really liked the spicy Cheetos Mix-Ups as well as the Locos Tacos Doritos – they tasted great!!

I grew up drinking Pepsi, so when I heard about Pepsi Next, I was intrigued, I had not tasted it prior to this party, so I wanted to really see whether it still tasted like the Pepsi that I have come to love. In trying this myself I have to say that this has a much better taste then Diet Pepsi (in my opinion) and I loved that it had such a smaller amount of sugar within it (less then regular Pepsi that is). The drink tasted good, and you did not lose the Pepsi flavor, which has happened in the past in some other brands when they tried to change the overall recipe. All-in-all, this was a great new product and I may even be changing what I drink now from regular Pepsi to Pepsi Next! For my kids, though they do not drink a lot of soda, I would not have as much of an issue with giving them this, especially with the lower amount of sugar that is in this!

In getting ready for summer this was a great time just relaxing in the sun, and with temps in the 70’s, we were definitely ready to simply relax after a long week and have some great conversations with some great friends!

Of course no grilling event would be great without some great grilling! We ended up getting some gourmet burgers from a meat shop in town and had at it! Top that off with fesh corn and some dessert and we had our fill of great times, great food, and great fun thanks to the folks at Frito-Lay!

Making the 4th of July That Much Better With @Sears #SearsPatio #GrillingIsHappiness #cbias

For me the 4th of July has always been about family and celebrations. Whether it has been celebrating at home or at family or friend’s home, we always tend to get together with others to celebrate the great nation that we live in, but also just celebrating the ties that bind us together. This year, instead of traveling to my inlaw’s house, we will be having a celebration at home (much of the reasoning behind this is because of what day of the week the 4th falls this year). We will be having a few friends and their kids over and will be having our own little celebration followed by fireworks that are sent up at a church which is within sight distance of our home, so we can watch them from our deck.

I am not the type of person to go all out with decorations or anything like that, but we do plan to have our whole deck set out and allow for the kids to have their own table as well so that they can have fun too. Don’t get me wrong, the American Flag will be flying and we might even have some fireworks of our own!

 

I was excited to be selected to work with Collective Bias on the #SearsPatio #GrillingIsHappiness campaign, as I had not been to Sears in a while and had not really explored the Sears Outdoor Living Section lately, as the last time I was there was around Christmas time and there were no outdoor patio sets or grills available at that time (or at least the selection of grills was vastly limited). I was asked to either shop fora new Patio Set or a New Grill, and let me tell you this was not an easy decision as both were needed and Sears did offer some great options for both.

When I went to the store I was impressed by the variety of things that they offered in store, as I had explored their online site (See below for links) and I knew that they had a wide selection of grills and patio sets. I was particularly impressed with the number of grills that they had in stock. From Weber to Charbroil and many others, you have a wide variety to select from.

I weighed my options and found a number of patio sets that I liked in the store, and I would have to say that the grill conundrum was equal, as my mind was left a bit boggled as there were so many options.

The salesperson that we worked with was very helpful and I was interested to see that he and his fellow co-workers were all using IPad devices to connect customers with their online sites. He showed me the items online as well as reviews that were there and as I continued my exploration, he kept track on his IPad of the items we were considering. At the end of the shopping trip he let me know about this and that he would email me links to all of the products that I had been considering in the store. How slick is that, and all he had to do is get my phone number and based on my Shop Your Way Rewards Account, he sent everything to my home email address.

 

I decided not to purchase anything at first as I wanted to go home and think about all of my options, explore the links that had just been sent to me as well as the rest of the Sears site itself and then make a final decision.

When I got home, the email that the salesperson mentioned was there and there were a ton of great resources included in the email itself. I explored these and the Sears website and I found both to be very helpful. I was happy to see that they had a review section as in two cases, patio sets that I considered were not receiving positive reviews from customers in regards to their overall outdoor durabilty, so I chose to steer away from these.

In the end, my wife and I chose to go with a new grill. Why did we choose this? Well, we do a lot of grilling and have come to find that Michigan weather is many times rough on grills. I have never had a grill that has held up to the elements after only a few years, nor a grill that I would write home about saying that it cooked better than what I could do inside (which really is not grilling). I have been a fan from a distance of Weber Grills for some time, but have never stepped forward to purchase one due to the overall cost. This shop gave me the opportunity to step over this and purchase the Spirit Weber Grill. I would have preferred the Genesis (The next size up), but no Sears stores in our area had this available and I would have had to pay over $100 for shipping, so that was not really an option.

I have just put this grill together in time for the 4th and I found that it did take a little longer than I had first thought, as I misused a few screws that I thought were to be used in another area, so it was definitely user error on my part. We ended up having our 4th of July Big get-together yesterday, and the grill worked amazingly well. The meat cooked thoroughly and I was impressed with how easy it was to use. The picture below shows you the last batch of meat that I had to throw on after my first batch was complete (people were eating a lot). People remarked later that the meat tasted great and I know that in part it was because of the tools that I was able to use!

My Take on the Products
I have tried Omaha Steaks in the past, and each time that I have I have been completely impressed. From the moment that you receive the selected meats to the preparation and consumption, the experience that you have is great. The meats comes individually packaged in boxes and arrived in a cooler with dry ice so that everything came perfectly ready for quick preparation.

When we were ready to consume the meats I was very impressed with the choice grade of meats that you receive. The meats were very lean and perfectly trimmed. The potatoes were well packaged too.

In looking at the Omaha Steaks website, I was impressed to find that they have a little bit of everything for any person. From hot dogs to hamburgers to poultry and Angus Reserved beef, you can find almost anything (in regards to meat) on this site. I also will say that the prices were quite reasonable and they have many packs that allow you to get a mixture of a number of things depending on what you are looking for!

Overall, I was very impressed and I know that you will be also!

The Geek’s Guide to Grilling

There is no shortage of tips for the perfect grilled steak, chicken breasts, or burgers. There is also no limit to the number of techniques for making the best ribs, brisket, or pork shoulder. But when it comes time to fire up the grill, the key to the best flame–kissed flavor is to understand the science behind those tips and tricks. Only then are you free to adapt them to any situation and to become the ultimate grilling geek.

Grill geeks are first and foremost obsessive about temperature. You can take your pick from grill thermometers, instant–read digital meat thermometers, infrared thermometers, and computer–monitored thermocouples. But not a single one of those gadgets is worth the price of its weatherproof carrying case if you don’t understand the relationship between temperature and energy. Though the two are intimately connected, they are not one and the same. And in fact, it’s the latter—the transfer of energy, not the temperature—that ultimately determines how your food is cooked.

 

It’s Not Just Hot Air

Need proof? Consider this: Water boils at 212°F. Dip your hand into a pot of boiling water for seconds and you’ll be left with angry burns and blisters. Or, you can stick your head into a 212°F oven, and not singe a single eyelash. (Please don’t actually try this.) It’s the same temperature, but two completely different rates of cooking. Why the difference? It has to do with the physical properties of the medium you are cooking in, particularly their heat capacity and density.

Heat capacity is a measurement of the amount of energy needed to raise the temperature of a specific amount of a material by a specific number of degrees. For example, while it takes 1 calorie of energy to raise the temperature of 1 gram of water by 1 degree Celsius, it takes a little more than 4 calories to raise the temperature of 1 gram of air by the same amount. Conversely, this means that 1 gram of air at a given temperature has about four times as much energy stored in it as 1 gram of water at the same temperature.

 

But wait a minute, you might be thinking, doesn’t that mean that air should heat things faster than water? Not quite. That’s where density comes in. Most of us know the high school definition of density—the amount of “stuff” that you have in a given amount of space. (For the nerds: It’s a property of a material defined as its mass per unit volume.) Water is a whopping 784 times denser than air. Take into account specific heat capacity, do a bit of simple math, and you’ll find that given certain temperature, a volume of water contains nearly 200 times as much energy as the same volume of air!

 

The short version: Air is terrible at transferring energy. Architects know this, which is why walls are built with air spaces to provide cheap, effective insulation. It also happens to be precisely why indirect cooking methods like barbecue and grill–roasting—where the whole goal is to slow down the cooking process to a crawl—are so wonderful.

 

Slow and Steady

The key to reducing cooking speed is to craft a two–zone indirect fire in which all of the coals are piled up under only half of the grill. For gas grills, this requires lighting one set of burners on the side or far back, and keeping the rest in the off position. Whether you’re using gas or coal, the grill cover should be positioned so that the vents are on the cooler side to direct airflow. Your DIY slow–cooking outdoor oven will then draw up cool air through the bottom vents, heat it as it passes through the coals, and then gently cook the food as it passes over it before escaping out of the open lid vents.

 

This type of indirect cooking leads to more even doneness from edge to center for large grill–roasted cuts like whole beef tenderloin or a double-size cowboy–style rib chop. Here’s one place where an instant–read digital thermometer really does come in handy, as it’s the best way to tell when your meat is cooked right. And “right” can vary, but I aim to bring my beef and lamb roasts up to around 130°F for medium–rare, by cooking them on the cooler side of the grill. I then transfer them directly over the hot coals just for a few moments to crisp up the exterior. Because warm meat with a relatively dry surface browns much faster than cold, wet meat, slow–cooking followed by searing will provide you with more evenly cooked meat than the traditional method of searing followed by slow–cooking.

After searing and resting, the meat will reach around 140°F, leaving you with a roast that’s perfectly rosy pink from edge to center. Similarly, I cook pork to 140°F and chicken or turkey breasts to 145°F. The USDA recommends an unconscionable 165°F for poultry, but I prefer to take my chances for the sake of moist chicken.

The Perfect Sear

Tender and juicy interiors pair best with a crispy, charred exterior. And the technique to getting the perfect sear from an outdoor grill comes down to the three ways through which heat is transferred: convection, conduction, and radiation.

With convection, energy is transferred to a fluid medium like air, oil, or water. That hot fluid then flows over and around the food, transferring some of its energy to it. As we know, air is relatively poor at transferring heat. Water is better, but limited by its 212°F temperature limit (above that, it converts to steam). Oil is better than air and worse than water, but can be heated much higher—usually up to around 400°F or so before it starts smoking or catching on fire. This temperature range is hot enough to catalyze the Maillard reaction, the complex cascade of chemical reactions that turn your food brown and add dimension to its flavor.

 

But you can’t very well fill your grill with hot oil. And that’s where radiation comes in. Radiation is the direct transfer of energy through space via electromagnetic waves. This method doesn’t require any sort of direct contact with a cooking medium—not water, oil, or air. Because of this, it is an extremely efficient means of transferring energy. Hot coals will emit a ton of electromagnetic radiation in both the visible spectrum and the infrared spectrum (fancy words that describe the length of the waves emitted). Put your food close to these hot coals, and that energy gets absorbed into its surface, causing it to heat up and brown. We cook via radiation every time we sear foods on the grill.

 

The final method of heat transfer is conduction, or the transfer of heat from one object to another by direct contact. It’s the primary means of energy transfer when you pan–sear a chicken paillard, or sauté vegetables. On a grill, it’s what results in those pretty grill marks. Light up your coals, cover your grill, and allow it to preheat for about ten minutes. By this point, the metal grill bars will have absorbed enough energy that they’ll very rapidly char the surface of the food they come in contact with. Grill marks aren’t just about good looks: They deliver valuable flavor and textural contrast, lending more complexity to your food.

 

Allowing your grill bars to preheat provides another benefit: It helps prevent sticking. Have you ever placed a salmon fillet over hot coals, only to have it shred apart as you try to flip it? This is because when you place cold protein on a grill, the metal in the grill grates actually forms a chemical bond with the proteins in the meat—and it’s a bond that’s very tough to break. With more robust meats like beef, lamb, or chicken, this isn’t a problem, as the meat proteins stick to each other better than they can stick to the grate. But for delicate meats like fish or hamburgers, this can be a big problem. When you get your grates hot enough, the proteins near the surface of the meat will actually cook so quickly that the grates won’t have a chance to bond with your meat.

From crafting the perfect bed of coals to flipping a stick–free salmon steak, you need much more than luck and a toque to master your grill. So the next time you fire up the flames or ignite a chimney of charcoal, stop and think about the science that’s being cooked up under the cover.

California Raisins Great Grilling Recipe

I hope that everyone is enjoying this great long Memorial Day Weekend, I know that I am. Not only have we been having fun together, but we also have been grilling up a storm! With that in mind, the California Raisin Marketing Board had approached me to try out their new grilling sauce and I was more than willing to try it out and give my two cents worth to all of you!

As many of you know I love to grill and I love trying my hand at new sauces and experimenting with what the grill can do and what I can do with the grill also. I don’t always have success on my experiments, but I still enjoy doing it none-the-less.

So as I was asked to try out their new grilling sauce, I said, bring it on, so that I could try my hand at something new and to see if it would remain in my famil’y keeper cookbook! So the recipe is below…and do keep in mind this recipe does has some heat along with it!

Raisin Chipotle Grilling Sauce RecipeRaisin Chipotle Grilling Sauce Recipe
Mix the ingredients below in a saucepan, then cover and simmer for 30 minutes. After cooling, puree in blender or food processor. Here are the ingredients for the Raisin Chipotle Grilling Sauce:

  • 1 cup prepared barbecue sauce
  • 1-1/2 cup California raisins
  • 1 cup husked and chopped tomatillos
  • 1/2 cup lime juice
  • 1/2 cup water
  • 1/3 cup chopped onions
  • 1/4 teaspoon ground cinnamon
  • 1 to 2 chipotle chiles, canned in adobo, minced, and sauce, to taste

I decided to use this on chicken, though I think that you could also use this on beef or pork. If you are at all concerned with the chiles, you could potentially leave this off and see what it tastes like, but I have come to find that just because you use chiles, it is not always hot (spicy). I decideed to pre-marinade and leave a bit on the side for crushing on during the grilling of the meat as I find that this tends to help with the overall flavor.

I did try the sauce with the chiles and tested it out before working with the meat and found it to be very tasty! As I mentioned also, the chiles gave it a little bite, but it was not spicy at all!

The sauce was easy to prepare and I found that I did tend to make a little more that the recipe called for to have some for pre-marinating and basting later, but it was worth it. I cooked the chicken on indirect heat and this extra grilling time allowed the flavor to truly cook on making the chicken taste delicious!

We ended up serving this with some Garlic Mashed potatoes and fresh  green beans amd everyone was very happy with the results, especially me. This recipe will devinitely remain in my cookbook for the future! If you are looking for a tasty sauce for your grilling cookbook, try this out, you will not be disappointed!
