Strawberry Shortcake Apple Cider Scones Recipe & #Giveaway

October 21, 2016 by dadofdivas 13 Comments

Strawberry Shortcake Scones

 photo disclaimer_zpsaa1cb05b.jpg

Can you believe it’s already October? I know plenty of kids who are excited for Halloween—anyone going as Strawberry Shortcake?!

And since there’s nothing better to warm you up on a chilly Fall morning than freshly baked apple scones, I’m providing Strawberry’s own recipe. They’re easy and fun to make as a family project (kids will love getting their hands in their to mix up the dough!), but best of all, they’re also absolutely delicious.

Strawberry Shortcake Scones

APPLE CIDER SCONES RECIPE

This is one of the trickier recipes I make, but if you are up for a bit of a challenge and you like to get your little hands in a big bowl of flour, maybe you can have a little teatime treat as well. You can even use all whole wheat pastry flour if you want these to be a little healthier, but don’t use regular whole wheat flour. Whole wheat pastry flour is your best friend when you want something healthy, but still light and fluffy. We’re trying to make light scones for teatime, not hard pucks for hockey.

If you are the Apple Dumplin’ type, go for the extra apples, if you are more a raisin type of gal, go for that instead. Or, if you’re like me, leave them plain and load them up with strawberry jam and a little butter, hot out of the oven. They are good for breakfast, lunch, a snack, or to cheer up any turtle companions.

1 – 1/2 cup  all purpose flour

1 – 1/2 cup whole wheat pastry flour

1 tablespoon baking powder

1/2  teaspoon baking soda

1/2 teaspoon salt

4 tablespoons cold butter (half a stick)

3 tablespoons honey

1/2 cup apple cider

1/2 cup buttermilk

Optional:

2 apples, peeled and diced by your assistant

or 1/2 cup raisins

1 egg (for egg wash)

Strawberry Shortcake Scones

1) Preheat oven to 450 F.

2) Completely mix the flours, the baking powder, baking soda, and salt in a large mixing bowl.

3) Mix the honey, cider, and buttermilk in another bowl, we’ll get to them later.

4) Chop the butter up into small pieces, and add to the dry ingredients.

5) Now go wash your hands, or the next part is as yucky as a slug in a sorrel salad!  Don’t be shy, stick your hands in the flour bowl and go butter hunting!  Every time you find a big chunk, rub it between your finger and thumbs. Sometimes we want perfect smooth things when we are baking, but this is NOT one of those times. So, as good as you are at this, don’t rub them all away into nothing, you want gravelly bits of butter chunks at the end, and it doesn’t matter that some chunks are a little bigger or smaller.

6) Pour almost all the liquid ingredients into the dry ingredients, keeping about 1/8th of a cup, and add the apples or raisins if you want them.

7) Mix with a big spoon. We do NOT want a smooth ball of dough, instead we are looking for the two C’s, crumbly and clumpy. We want to mix until we get one main ball just barely sticking together with crumbs around it. If it’s not quite getting there, add more of the liquid ingredients a little bit at a time and try again. As lemon will tell you with her hair dye, it’s berry easy to add it, but it’s impossible to take it away.

8) Sprinkle some flour on a counter or a very large cutting board, and dump the ball of dough onto it. Then dust a little flour on top and smoosh the ball down with your hands into a flat disc. Again, it’s actually perfect if it’s a little cracked but still holds together, better than it being wet.

9) Roll it just a little until it’s flat and about an inch and a half thick.

10) Use your cookie cutter and cut out chubby little circles and put them on a baking tray or cookie sheet.

11) You don’t have to, but for a berry beautiful shine every time, beat an egg in a small bowl or mug until smooth, with a splash of water or milk.   If you have a pastry brush, lightly paint the top and sides of every scone. If you don’t have one, do some finger painting instead.

12) Bake in center of oven for 14 minutes, or until the tops are all golden brown. Have your assistant check on the oven and remove the scones to cool for a minute.

The scones will keep for a couple days in an airtight container, and they are good cold as well, but I love them when they are hot enough to melt a little butter, especially with jam.

I have a fun Fall giveaway for you. First, you can add to your Funko Pop! collection with their latest release: a ! Unlikely Food Pairings On The Grill

September 16, 2016 by dadofdivas Leave a Comment

al fresco chicken sausage

 photo disclaimer_zpsaa1cb05b.jpg

Unlikely food pairings are oftentimes surprisingly tasty. Chili powder on mango anyone? How about olives with orange rind? These flavor combinations, while seemingly nonsensical, are a treat to your palette and a testament to the endless ways in which you can be creative in the kitchen.

Since culinary innovation knows no bounds, why not take this to the grill? al fresco’s new Sweet & Smoky BBQ Chicken Sausage does just that, providing you with an unlikely new flavor that will perk up your meal. Savory with a hint of smoky flavor, you may just get carried away thinking about all the delicious dishes you can pair with your new summer staple.

I decided to take the new al fresco’s new Sweet & Smoky BBQ Chicken Sausage and put it to the test. I grilled up the sausage with the following to make a great new take on an old favorite stew and came up with a great tasting dish.

Recipe

  • 1 Package al fresco’s new Sweet & Smoky BBQ Chicken Sausage (Grilled and sliced)
  • 1 Package al fresco Turkey Bacon
  • 1 Large Zucchini (Cubed)
  • 4 carrots, peeled, cut into 1-inch slices
  • 2 stalks celery, cut into 1-inch slices
  • 3 large russet potatoes, peeled and cut in eighths
  • 3 cloves garlic, minced
  • 1 cup red wine
  • 3 cups beef broth
  • 1/2 tsp dried rosemary
  • 1 bay leaf
  • 1/2 tsp dried thyme

al fresco chicken bacon al fresco chicken baconal fresco chicken bacon

How does this sound to you. I can tell you that it gave the  stew a great flavor andit ended up being a great hit in the family too!

One of the things I really liked about this product was that not only do you get great tasting meat, but it is made with lean, skinless chicken meat, which means that it contains 70% less fat and 30% less sodium than average pork sausage which means it’s better for you. Better yet, all of al fresco’s chicken sausage flavors are gluten-free and are packaged fully cooked – meaning you can enjoy your delicious grilled sausage in minutes – talk about a time saver!

If you love food and love a contest, you also have the ability to enter a great contest! Visit here and vote for your favorite grilling recipes using sweet and smoky BBQ. When you vote, you will be entered to win $500 AND a high quality grill ($500 value).

A carrot cake for children hating vegies

January 25, 2016 by dadofdivas Leave a Comment

A carrot cake is a wonderful example how vegetable, particularly carrots, can be hid and not recognized at all.

The question ‘How to feed children’ concerns all parents. Very often feeding your kids can be challenging. Children can utterly refuse eating healthy foods you try to serve them at times and you can be left pulling your hair out trying to be a great parent and keeping your kids healthy too.

Kids do not normally want to think of nutrition value. For them food’s main function is to taste great. I gave up explaining how important for well-doing is to get enough fiber, protein, vitamins, microelements and so on a long time ago and I am sure that you have too. After numerous failed attempts at feeding my kids with foods that were healthy but vapid in their opinion, I made up my mind to use some tricks. (Yes, raising children requires much ingenuity!) I guess most parents use them on a regular basis. My favorite one is to disguise foods they do not want to eat (Do you do this too?).

A carrot cake is a wonderful example how vegetable, particularly carrots, can be hid and not recognized at all. I recently found a great carrot cake recipe that was typical of what I mean here. The recipe I found from someone that I know that works for uk.cupid.com.  One thing that I liked about the recipe was not only all of the healthy things that were included but also that it was gluten-free. This recipe is a real godsend for parents whose children suffer gluten intolerance or the Celiac disease.

But before heating the oven and prepare all of the ingredients I recommend all parents get tuned-in to cooking. It means to get rid of all worries, bad thoughts and frustration. I have definitely noticed that a good mood is a secret of delicious baking.

The equipment you’ll need is as follows

  • An oven heated up to 350 degrees
  • A mixer
  • A 2LB loaf pan
  • A parchment

The set of products is unpretentious too.

  • 1/2 cup butter
  • 3/4 cup sugar
  • 1 cup grated carrots
  • 1/2 cup sultanas (soak in hot water)
  • 2 eggs
  • 1/4 cup chopped nuts
  • 1 tsp cinnamon
  • 1 tsp gluten free baking powder
  • 3/4 cup gluten-free self-raising four

Heat the oven, line a loaf tin with parchment and grease it with some amount of butter. Beat butter and sugar to achieve creamy and soft texture. Grate carrots and add them to the initial texture. The next step will be to stir in the eggs and sultanas soaked in hot water. Chop nuts and mix them with cinnamon, gluten free baking powder and gluten free self- raising powder. Marry the mixture comprising of liquid ingredients and dry-goods mixture. Tip it into the pan and bake for 50 minutes. The carrot cake is ready when the toothpick is clean after being poked into the highest part of the cake. Take out a pan, let it cool for a 25 minutes and remove your work of culinary art.

There you go! Call your kids over and let them enjoy the fruits of your labor. Make sure not to mention that it is made of carrot. I bet they never guess!

My Take on the Book

There is a “shop smart” and another section with facts about chicken. The cookbook has 6 different sections with corresponding recipes. Some of the sections are All-American, Latin and Caribbean, Mediterranean, and Asian / Indian.
Each recipe is written with attention to details for the reader. . There is the basic recipe for the chicken. The step – by – step instructions for preparing the chicken are well written and easy to follow. Linda includes a side dish recipe on the next page. She has included a “shopping list” so the reader knows what needs to be bought or found in one’s pantry. Helpful hints and nutrition facts are included for each recipe.
I chose two different recipes to prepare for my family. One was the Lemon-Pepper Chicken with Carrot and Zucchini Cannellini Beans.. The other one was Chicken Ragout with Mushroom Rice. Both recipes were easy to prepare. The recipes were tasty , however for my taste, I added additional herbs to flavor the dishes.
I believe if you are searching for a new chicken cookbook, you may find this one a new resource for your family meals.

The Hundred-Foot Journey – French Onion Soup #100FootJourney

June 30, 2014 by dadofdivas 4 Comments

The-Hundred-foot-journey

In “The Hundred-Foot Journey,” Hassan Kadam (Manish Dayal) is a culinary ingénue with the gastronomic equivalent of perfect pitch. Displaced from their native India, the Kadam family, led by Papa (Om Puri), settles in the quaint village of Saint-Antonin-Noble-Val in the south of France. Filled with charm, it is both picturesque and elegant – the ideal place to settle down and open an Indian restaurant, the Maison Mumbai. That is, until the chilly chef proprietress of Le Saule Pleureur, a Michelin starred, classical French restaurant run by Madame Mallory (Academy Award®-winner Helen Mirren), gets wind of it. Her icy protests against the new Indian restaurant a hundred feet from her own, escalate to all out war between the two establishments – until Hassan’s passion for French haute cuisine and for Mme. Mallory’s enchanting sous chef, Marguerite (Charlotte Le Bon), combine with his mysteriously delicious talent to weave magic between their two cultures and imbue Saint-Antonin with the flavors of life that even Mme. Mallory cannot ignore. At first Mme. Mallory’s culinary rival, she eventually recognizes Hassan’s gift as a chef and takes him under her wing.

“The Hundred-Foot Journey” abounds with flavors that burst across the tongue. A stimulating triumph over exile, blossoming with passion and heart, with marjoram and madras, it is a portrayal of two worlds colliding and one boy’s drive to find the comfort of home, in every pot, wherever he may be.
