I have never tried Omaha Steaks in the past, but I have to say that I am impressed. From the moment that I received the selected meats for me to try to the preparation and consumption, the experience that I had was great. I was able to try out a number of different meants as well as their twice baked potatoes (YUM!) and over the past few days we have been having a grilling feast! The meats come individually packaged in boxes and arrived in a cooler with dry ice so that everything came perfectly ready for quick preparation.

When we were ready to consume the meats I was very impressed with the choice grade of meats that you receive. The meats were very lean and perfectly trimmed. The potatoes were well packaged too.

In looking at the Omaha Steaks website, I was impressed to find that they have a little bit of everything for any person. From hot dogs to hamburgers to poultry and Angus Reserved beef, you can find almost anything (in regards to meat) on this site. I also will say that the prices were quite reasonable and they have many packs that allow you to get a mixture of a number of things depending on what you are looking for!

Overall, I was very impressed and I know that you will be also!

It’s Grilling Time! Stepping Up For a Challenge…

I was recently challenged to go to Sams Club and shop for supplies to grill something amazing in preparation for Easter. Yes, I said Easter, and yes you can grill your meal on Easter. You don’t have to simply use your oven! Anyway, I scoured my books and recipes and found an amazing looking pork tenderloin recipe that I knew would be perfect. The one that I found was called: Disappearing Tenderloin. The recipe include the following:

CookingHeat Instruction – Cook With Indirect Heat on Medium

FOR THE MARINADE:
1/3 cup fresh orange juice
2 tablespoons extra-virgin olive oil
2 tablespoons Worcestershire sauce
1 tablespoon molasses
1 tablespoon minced garlic
2 pork tenderloin, about 1 pound each

FOR THE RUB:
2 teaspoons chili powder
1 teaspoon cracked black pepper
1 teaspoon kosher salt
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon granulated garlic

FOR THE PICO DE GALLO:
2 cups finely chopped ripe tomatoes
1 cup finely diced red onions
3 tablespoons finely chopped fresh cilantro
1 tablespoon fresh lime juice
1 tablespoon extra-virgin olive oil
1 to 2 teaspoons minced serrano chiles, including seeds
1 teaspoon kosher salt

Extra-virgin olive oil

TO MAKE THE MARINADE: In a small bowl whisk together the marinade ingredients.

Trim any excess fat and silver skin from the tenderloins. Place the tenderloins in a large resealable plastic bag and add the marinade. Press the air out of the bag and seal tightly. Turn the bag to distribute the marinade, place in a bowl, and refrigerate for 1 to 2 hours, turning occasionally.

TO MAKE THE RUB: In a small bowl combine the rub ingredients.

TO MAKE THE PICO DE GALLO: In a medium bowl combine the pico de gallo ingredients and mix thoroughly. Cover with plastic wrap and allow to stand at room temperature for about 1 hour to fully incorporate the flavors.

Remove the tenderloins from the bag and discard the marinade. Coat evenly with the rub and lightly brush or spray with olive oil. Allow to stand at room temperature for 20 to 30 minutes before grilling.

Grill over Indirect Medium heat until the centers are barely pink and the internal temperature reaches 155°F, 25 to 30 minutes, turning once halfway through grilling time. Remove from the grill, loosely cover with foil, and allow to rest for 3 to 5 minutes before cutting in thin slices on the bias. Serve warm with the pico de gallo.

I have to say that I was amazed at the variety that Sams Club provides its members. It had been a little bit of time since the last time I was at my local Sams Club, and in going this past week I was happy to find that the idea of providing bulk amounts for reasonable prices has continued in earnest.

I was happy to find some very good deals for people preparing for Easter including:

My Take on the Grill
I had never been able to try out a George Foreman grill before, but I had always seen the information about them on television as well as in the store. I even knew some different people that had them. From what I heard, they seemed to be pretty cool. They allowed you to grill inside and claimed to have a patented way to cut out the amount of the fat from most meats and also help to cut down on the time needed to cook as well.

I was excited that because I am a member of the Family Review Network, I was given the opportunity to try out the new George Foreman Evolve Grill. When I got the box for this grill, I didn’t know what to expect, as the box itself was HUGE. When I opened it though I saw the grill (in it’s box) in all it’s glory. The grill itself came with a number of different plates (Not all the plates mentioned above) and reading through the product manual I was surprised to find out all that this grill can do for people like me. Not only could it grill, but it could bake!

When I used this grill I decided to start simply and try out some burgers. To say it simply, I liked how fast the grill heated up and how evenly the burgers were cooked. Do be aware that it does let off heat though, so if it is in the middle of the summer, know that your kitchen will heat up a bit when you use this. I do love the idea though of being able to grill in the winter, and not have to brave the elements!

We have not yet tried out the baking features, but I look forward to doing this as with the time it takes to heat up, and the fact that it closes completely, I think it will be quite efficient to use and provide for easy clean up in the long run.

The dish-washable plates were great and the claims that the product does cut fat does seem to be true, as much of the fat of the burgers we made seemed to be burned off, so much healthier in the long run for the family and the flavor stayed just as good as on the grill (in my opinion).

Overall, I was impressed with the grill itself. The only drawback that I have found is that it is a bit large and takes up some counter space (if you don’t have another place to place it). If this is the only thing that I find, I think I am in good shape!

Grilling Recipes

Elizabeth Karmel has written a grilling guide that will alleviate at least some of your problems! It’s called the “Girl’s Guide to Grilling” and is downloadable for FREE at http://www.stfsavortheflavor.com/. Don’t be thrown off by the “Girl’s” part either-it is filled with a ton of easy and healthy grilling recipes! Here’s a recipe I thought your readers might enjoy:

Grilled Banana Split with
Homemade Bittersweet Chocolate Ganache
Serves 4

GRILLING METHOD: Direct/Low Heat
4 firm, but ripe, bananas, unpeeled
1 tablespoon white sugar
¼ teaspoon ground cinnamon
1 tablespoon untoasted walnut or other nut oil, plus more if needed
8 small scoops best-quality vanilla ice cream
½ cup coarsely chopped pecans or walnuts, toasted
1 cup chocolate ganache, below
Best quality vanilla ice cream (or favorite flavor)
Whipped cream, optional
Chopped toasted pecans or walnuts
Maraschino cherries, optional

Slice bananas in half lengthwise and crosswise so each banana yields four pieces. DO NOT remove peel. Set aside. Mix sugar and cinnamon and set aside. Brush bananas lightly with oil. Sprinkle cinnamon-sugar on cut sides of bananas. Let bananas sit for 5 minutes.

Place bananas cut-side down on a clean cooking grate over Direct Low heat. Cook for 2 minutes or until grill marks appear. Using a pair of long-handled tongs, turn over and let cook 5 more minutes or until the skin pulls away from the banana.

Arrange 2 banana halves without skins on each serving plate. Top each serving with 2 scoops of ice cream. Ladle ¼ cup of hot fudge over each sundae. Sprinkle each with 1 tablespoon of chopped nuts, whipped cream and place a cherry on top. Serve immediately.

Note: You can follow the method for grilling the bananas and use any fruit. Rings of pineapple, stone fruits (peaches, plums, apricots) with the pit removed, apples and pears are perfectly suited to the grill.

Chocolate Ganache
Serves 8
6 ounces 70% bittersweet chocolate, preferably Sharffen Berger®
cup heavy whipping cream
2 tablespoons sugar
2 tablespoons liqueur (such as Kalhua, Frangelico; Dark Rum or Bourbon)
½ teaspoon vanilla extract

Make the Ganache up to 2 days in advance. Chop chocolate bar into bite-size pieces or measure chips. Heat cream to almost boiling, add sugar and stir to combine. Remove from heat and pour over chocolate pieces. Whisk vigorously until melted, and cream is completely incorporated. Add liqueur and vanilla, stirring constantly until mixture is cool the touch. Cover with plastic wrap and set aside or refrigerate.

Note: If refrigerated, it will need to be brought to room temperature and warmed before serving.

We are officially within the summer season, and with that comes poolside drinks, barbeques, and lots of food!  We all know how hard it can be to resist the temptation of sipping on a sugary cocktail or indulging in that chili cheese dip, but what if there were delicious alternatives for your family?
For those of you who enjoy sweet beverages or cocktails, HINT, a 0 calorie, 0 sugar flavored water is your perfect alternative.  With just a ‘hint’ of natural fruit flavor, and no preservatives, HINT will give you that sweet taste you crave without all the sugar and calories.  It comes in 10 flavors, so it’s perfect in your favorite cocktail!
Additionally, below you will find some great recipes provided by Wellspring Camps, the nations leading weight loss organization, that you won’t feel guilty about indulging in, including:
  • Teriyaki Chicken Kabobs
  • Black Bean Dip

Black Bean Dip
Serving Size: 2 Tbsp
1 -15 oz can black beans, drained and rinsed
1 small can green chilies
1 cup salsa
2 cloves garlic
1/2 tsp cumin
optional: 1/4- 1/2 c cilantro
Blend all ingredients in a food processor. Add salt if needed.
Calories: 42
Fat: 0g
Sour Cream Chicken
Ingredients:
1.25 lbs. Chicken breast, boneless skinless
1 cup Onions, Chopped
1.5 Tablespoons Paprika
½ teaspoon Salt
2 cups Chicken broth, fat free
2 cups Sour Cream, fat free
2 teaspoon Flour
Method:
1.        Lightly spray pan (oven safe dish) with cooking spray and place chicken breasts in pan
2.        Bake in a 350 degree oven for 20 minutes
3.        Sautee onions in a skillet (use cooking spray) until translucent, not brown
4.        Add chicken broth, paprika, and salt – reduce stove to low heat.
5.        Stir flour into the sour cream, mix well
6.        Slowly add sour cream mixture to the broth, mix well
7.        Add reserved chicken breasts and simmer until chicken is heated through and the sauce has thickened.
Yield: 5 Servings, 4 ounce chicken breasts
